Trying to understand body

I have been testing for BG just over a week now and am logging and graphing the results.
Where can I get some further understanding as to why my BG is at a certain level and why it is not responding in the manner expected. Perhaps it is my expectations that need amending, more than willing to find out. I am not taking drugs as yet, awaiting appointment after bank holiday, but I would rally like to try and effect some remedy by life style change.

I am testing six times a day basically before and after meals. I have changed my diet to low carb since about a week prior to first test.
Generally I am finding that volume is affecting BG more than content of meals, although I am still learning about some specifics when counting carbs.

Even though I can effectively have the same meal on two separate days my body reacts differently, one day can be an increase in BG by 0.5 and the next by 4.0, why?

My BG sometimes goes down over night and sometimes goes up, why?

I can think I'm doing well with BG slowly creeping down and then bang, a huge spike appears, why?

Missing meals will also not maintain a decrease in BG, what's my body doing?

Totals are averages , columns test period, rows days.

The precision of your meter (or lack thereof) is very significant.
At the moment BG meters are only required to be accurate to +/-20%
So if your "real" blood sugar is 12.0 your meter could read anywhere from 9.6 to 14.4 & still be considered acceptable!
Though, in practice, they will usually be better than that, it makes drawing conclusions from higher readings like yours very difficult I'm afraid.

Volume of carbohydrate is what matters. Look at the "Carbohydrate" total on labels rather than "of which sugars". The nature of carbohydrate affects how quickly your blood sugars go up & down, not how much.
Until you get your meds sorted, reducing your carbs seems a sensible option. Exercise helps but when you are already high it can actually send you higher.
