Can anyone suggest how to calculate the carbs of a chicken breast, lightly dusted in flour? Help!
Also has anyone made home made sushi? How do you carb count for that?
Thanks in advance for any advice...
Erica

Wouldn't eat sushi, it's surprisingly carby 90% rice+?

Lightly dusted in flour? It will be a negligent amount. I wouldn't count it, to be honest. Does it need to be lightly dusted in flour? Chuck some good olive oil over it and lots of garlic and paprika
Hi Mahola! Sorry I;ve been quiet recently. Been a crazy few months. It's 'blacken chicken' and quite yummy for DD. I found a site that claimed it at 6 carb per 170g. Not too bad

It is, but we were just told that DD is also coeliac and as she loves everything Japanese and she's allow to eat rice... well thought I'd try

Have you tried cauliflower rice? It is surprisingly good, in fact I prefer it to regular rice! You can ring the changes with different herbs and spices. If I'm doing something 'Oriental' I tend to cook it in coconut oil, with Chinese 5 spice, lemon grass, ginger, garlic - maybe add prawns and cashew nuts. I grate the cauliflower rather than food process as I don't like it too fine and be sure to not over-cook it. It's delicious! If I was feeling adventurous, I could even have tried home made sushi, but you don't have that 'sticky' texture to hold it together.

Yes atkinsmo, I also love cauliflower rice! I'm a great curry fan and could not live without rice normally but since diagnosis in July I've gone low carb so rice is out the window. But discovered cauliflower rice! It's great with All the things I previously had rice with. My husband loves it also. ( he was not a fan of rice) I encourage everyone to try it.

If you can find out the carb value for 100 grams of flour, weigh that out then weigh whats left after you've dusted your chicken you'll get your answer. I'm at work so can't have a gander in my book for you but as already said its going to be negligible.

Regards Martin

When I dust chicken or similar, I dont bother to count the flour unless it's quite a thick coating.

I love sushi! I bolus a proper time in advance to cover the sticky rice. Ive made homemade before and got my carb estimate pretty good by paying close attention to the amount of rice in each one. It worked well : )

But if she's coeliac, surely even a 'light dusting' of flour would be toxic? Coconut flour? Almond flour? Ground flaxseeds - even Parmesan preferable?

Good point AtkinsMo. I am using GF flour Just trying to keep her diet fun and varied so it isn't too much of bummer

Thank you Azure. I measured the rice per roll and everything not sure if that's what placed her into a hypo or something else, but will definitely try again.
You don't by any chance still have the count, do you?

No, sorry, I don't I just made them and worked out the approximate carbs for each type but didn't keep that info.

I don't know how you measure rice but I used a tablespoon (a proper measuring tablespoon) and then worked out the carbs using that measure.

You could try the same meal again and adjust the insulin slightly then see how that goes. It sounds basic but it works well.

Thanks Martin. I also looked it up and it can to 0.09 per serving, so I think we're good

could you use brown rice? Still high carbs but a slower digestive transit so less likely to cause a spike........well at least it works for me!!

Make a note of the bolus dose you give (and the weight of the rice roll) and keep it as a reference for next time she eats the same meal, if she's hypo'd tonight just adjust the bolus dose downwards until you get it right.

That's how I approach meals such as takeaways where the carb content is unknown.
