Unfortunately it is more common than it should be to be misdiagnosed as t2 because you are an adult
There are some tests which can help distinguish between t1 and t2. (Sorry I cannot remember the names of the tests.)
Can you ask for these to get clarification and potentially avoid damaging your body?
My average daily meal plan is something like egg muffins which are egg and tomato and ham baked for breakfast. Low fat turkey mince and veg for lunch and similar for tea. I’m trying not to snack but if I do it’s a small banana or an orange. I drink either water or coffee/tea with skimmed milk and no sugar/sweetener.
Have you been referred to your diabetes clinic at your local hospital or to a dietician? Muffins, orange juice and bananas are all high in carbs, and that's the reason why you are feeling the way you are. You desperately need some help with working out what foods have the highest carbs.
I might be wrong but I don't think Absxx was talking about a traditional muffin rather a muffin made up of egg, tomato and ham which would be low carb. I also see no reference to orange juice rather an orange as a snack. A small banana ie 100grams is supposed to be about 23g but possible due to fibre etc I would only carb about 12g per 100g for a banana and it works fine for my son so maybe not as high carb diet as you think.
I agree that Absxx should be push for the type 1 tests to ensure she is gets the right treatment and support.
Your right when I say muffins I mean literally just egg ham and tomatoes baked in a muffin tray.

The most common is anti-GAD, but there are more antibodies. If you test positive for any of them you have T1.
