Type 2 And Coconut Oil

Welcome to the forum @hopeandpray I like to use coconut oil for stir frying cauliflower rice. The sweetness of the coconut nicely cancels out the funkiness of the cauliflower.
 
Hi. I eat a teaspoon of coconut oil from the jar and also fry with it.
It's the best for most recipes.
My daughter massages it into her hair and leaves it for an hour or so before washing her hair. It helps with thin or damaged hair.
I also rub it into my skin. x
 
I ate too much of it before exercising today :hungover:

Joking aside, I use it a lot, particularly for frying food that goes well with the coconut flavour. When I don't eat enough during a meal and am still hungry afterwards, I just eat a spoon straight from the jar. Some people mix it into hot drinks too. I recently started using it as body lotion replacement and like it!

Hi there all, I'm new to the forum though not new to type 2 Does anyone have experience of using coconut oil in the type 2 diet?
I normally use it for my bacon and egg breakfast, and for frying meats for Lunch/Dinner
 
I accidentally bought the non-steamed type recently and found the coconut flavour unsuited to most recipes, so I kept one jar and swapped the rest for my usual no-smell no-flavour steamed variety. As mentioned above I will try the "virgin" variety with cauliflower.
