Type 2 - Missing injection

I am a T2 using Novarapid 3 times a day plus Lantus once a day(evening)....I take Novarapid 1) pre breakfast 2) pre Lunch 3) pre evening meal, and Lantus with small snack at 09:00.......What would be the consequence of occasionally missing Lunch, and not taking the midday Novarapid?...The reason for asking is that I have recently started weekly fishing trips, and it would be more convenient to get by on coffee during the day...Fly fishers need to travel light.

I'm a type 1 and i know if i miss an injection my sugar levels will rise drastically even just drinking coffee with milk in it. I'm not to sure with type 2 how it all works but if you are having to take tablets/injections 3/4 times a day its obvious that your body needs the medication. If you can't manage to take lunch with you could'nt you take some crackers or dry biscuits these would'nt take up to much space, just so you are getting some carbs, it don't do no one any good going hungry and missing meals what ever the reason.
