Type 2's: What was your fasting blood glucose in a morning?

LOW GI/GL GINGER CAKE for those who requested I post it on here. You could probably substitute other flours such as soya but would need to use xanthan gum with it for it to hold together. Possibly add grated root ginger instead (or with) the ground ginger

GINGER CAKE
4ozs Quinoa flour
1/2 tsp baking powder
6 oz coconut palm sugar
ground ginger to taste
4oz pinhead oatmeal
4 oz unsalted butter (sweet butter)
1 beaten egg

Melt butter and stir in the sugar followed by rest of the dry ingredients
beat the egg and stir into the mixture

Pour into small loaf tin lined with baking parchment

cook at 120C for an hour to hour and a half until knife comes out clean

lift out of tin with edges of paper and cool on a baking rack

I adapted one of my old favourite recipes and luckily it came out ok the first time - apart from burning the sugar slightly (I'd put butter AND sugar on together but as it doesn't dissolve into the butter like normal sugar does it stuck a little - hence the melt butter first.......
 
Gotta admit lazy as hell t2 for three years I am a veggie on 4 years go to work 5:30am get home somedays 5:30 to 7:30 pm get home way to tired for anything I'm on metaformin 1000 and insulin 25 units I know I have to exersize.
Working those hours you're not lazy.
Neglectful maybe.
What are you eating and doing all day?
Do you have to work such long hours?
I've done fifteen and eighteen hour days myself in the past ..... was it worth it?
 
Well I screwed my courage up and tested my blood this morning. It's 6.3. I am well happy with that as I have had a few days of takeaways, cakes, and all sorts of food I shouldn't even be looking at never mind eating. Hoping to get back to normal now though. Looks like all the grafting has kept things more or less under control, and thats with not taking my metformin for 2 days as I stupidly packed them then couldn't find the box they were in. I don't want to fall into bad habits again.

That would be far too much carbs for me (quinoa flour, palm sugar and oatmeal - all no-nos). But whatever works for you...
 
5.8 this morning after bed of 5.6....I'd prefer lower than 5.8 to be honest! Still fuzzy headed and chilly so assume I've got a bit of the cold starting that my daughter has
 
Back up to 8.9...had a hypo after dinner last eve dont ask em why or how as had a big dinner must be the insulin sighs I swear the Insulin hates me as much as I hate having it
 
6.5 this morning after a 6.3 at bedtime last night. It seems the late coconut yogurt has tipped me back into the sixes for my fasting reading. Oh well, tomorrow is another day!
