Hi @Batul

Great to hear your fabulous hard work has paid off.

I’m really interested to hear about your vegetarian meal plan. Do you mind sharing a few ideas/typical what you have been eating in a day please?

So pleased for your great results congratulations & very well done!

@Brekkie how are you getting on? I know we were diagnosed at similar times.

I don't eat breakfast and have a coffee with cream and butter when I awake. I eat after midday and don't eat anything after 7pm.

I usually have a cheesy omelette with home grown tomatoes for lunch, we keep hens, so use the fresh eggs from the morning. Variations of lunch include a selection of cheese, boiled egg, sliced cucumber, peppers.

Evening meal could be cauliflower or broccoli rice with spinach and paneer curry made with cumin and green peppers, sometimes I use a little onion but not always as to keep the carbs down. I make aubergine stir fry with green pepper also.

I also enjoy baked camembert with celery and cucumber and pepper slices.

I've recently bought some low carb bread from a company online and have a halloumi and egg sandwich sometimes.

I do miss potato very much as that was my favourite food and I ate it everyday, I haven't touched it in 12 weeks! I did try and make swede chips but it spiked me to much so haven't used that again but will try celeriac at some point.

With the advice of this wonderful forum community, I'm sticking to above ground veg, eggs, cheese, nut, olives etc and will start to experiment more when I've reduced my levels even more, always checking what spikes with my GM meter. I don't eat fruit at the moment.

I don't feel hungry between meals any more.

I hope that helps. Keep us updated on how you are getting on.

Hi Batul

Nice to hear from you. Similarly I’m relying on eggs and cream and cheese. I also rely on chicken, mince or fish curry with fenugreek leaves (methi) though I’m trying my hardest to keep the onion and tomatoes down in the curry.

Vegetables that are helping me are cabbage and aubergine, bitter gourd and okra. Green beans, mushroom and carrot stir fry I can take a small portion. I have to really watch the carb portions of even the low carb veggies and make sure to pair with protein.

Home grown tomatoes and your own hen eggs sound fantastic! Lucky you!

I was recently thinking of incorporating paneer and halloumi too instead of relying on the usual mature cheddar cheese so I might try your evening meal -Sounds yum!

I have heard a lot about cawliflower rice and broccoli rice but I’ve never managed to successfully make it! I always end up with a mushy mess or I feel it’s under cooked. Is there a trick to the perfect cawli /broccoli rice? Please do share if you can.

Increasing my fasting window in the evening is really helping with my blood sugar levels in the morning. Often under 5.0 fasting.

I’m incorporating a late night walk with family and I love taking in the atmosphere most evenings after the days rush work and household activities. I know it’s not as intense exercise as some folks but I find it relaxing and I’m sure it’s helping my morning levels.

Just went for my HbA1c yesterday though I’m not sure I’ll be able to do as well as you! Let’s see...

Keep in touch!

@Brekkie I've also been out for some evening walks with dog, just invested in a head torch for the darker nights. Let us know how you get on with your HBa1c result, I'm sure it will be impressive with all the hard work you have updating us on.

Best, B

@Brekkie That's fantastic news, well done for all your hard work, you should be announcing that in the success part of the forum.

Keep in touch and again really well done.
