Vegetables

I have just been informed that I am prediabetic. I am 64, have quit smoking and am a little overweight. Taking exercise will not be a problem, but diet may be. I have cut out sweets and chocolate so that's not a problem. However, I absolutely detest cooked vegetables with the exception of peas, runner beans, French beans and any types of pulses. I live in Spain, and in the summer, salads are not a problem. Does anyone have any suggestions that may help please?
 
I'm much the same, hate cooked "green veg"

My answer has been as you mention - lots of salad, and some fruit from the lower sugar/carb end of the fruit family - mainly lots of berrys - strawberrys, blackberrys etc

I absolutely detest cooked vegetables

I expect young children not to eat their veggies, but you obviously don't fall into that category :)
Was it the way veg was prepared and served, when you were young, that put you off ?
Not sure whether you're asking as a consumer only, or a preparer of meals.

I can eat loads of veg, not overcooked. Our mothers (those of us now in our sixties etc.) often cooked veg to death. So we've had to learn to re-appreciate it.
Also, learn to literally 'spice' up your veg. Curry is a favourite for me :D

With your current position being 'detest' you may have to work at this :(
