Vegetarians: What have you eaten today?

Your Thai salad looks tasty, even though I had to look up a few ingredients and I don't think we can buy Jicama (Mexican turnip?) in the UK.

Good luck switching to a vegetarian diet: it'll be interesting to see your contributions to this thread.
 
I must admit I did alter the recipe a bit. I didn't add Jicama and Papaya.
I think the hardest to change. will be cheese and cream. But one step at a time.

I'm sure it will be a process but I'm starting with three evening meals a week with out meat and go from there.
I'm excited as I found out that hummus does not spike my BG. Also in the last month my weight loss has increased with less meat.
Good stuff. I am lucky with hummus too. Do you make your own or buy it?

I've done both and find very little difference with my BG.
I seen to react with rashes when I use canned goods like beans and tomatoes, so I have to start from the dried bean which is more time consuming.
So in my lazy day I do buy it ready made.

You will learn that veg*n food aint fast food Worth waiting for though.
 
It was a bit of a cheat They do wee jars of paste in Tesco. Green beans, red pepper, mushrooms, paste, coconut cream, topped with toasted flaked almonds.

Had the rest today. Same breakfast and lunch too.
I love to add tufu ..
Have you tried the red or green Thai curry paste , that is in a pack , which you keep in the fridge for those quick cooking moments cheating allowed .. x
 
All my usual ..and tonight .. was .. transformed left overs ..

there were two veggie sausages left in the hotpot mixture , pleanty of veggies and beans ..
So I added a small portion of wholemeal pasta , to make a bake with ..
Tom cat had the bigger portions ... I don't have pasta very often I am not a big fan .. but it made a quick meal ..

Tom Kat eats veggie meals but is not vegetarian...

This is all me. Mr Hot pepper was raised on a farm so he's used to having meat with every meal. But in the last year I have made many a veggie meal and does enjoy them so I will continue to gradually change things. No complaints from him so far. I really haven't made a big deal of it.
I make a yummy veggie curry and I'm not even sure he notices that there isn't any meat in it. He biggest thing is that there is a lot of flavour and spice. I have two drawers filled with spices from all over the world so that won't be a problem.

I never get complaints either , that's nice isn't it ..
your spices sound good ..
I never think about it at all .. I have been veggie for most of my life ..

Not sure how many veggies are here on this forum but I have a table that seats 14. You are all welcome for curry. But it would be a very expensive meal as the plan tickets to Canada are expensive.

Exciting you are in Canada .. we meet world wide friends here ..on the forum
In Canada you can get food from world wide I believe .. that's good .. a great variety ..
