Coincidentally, I had scrambled eggs this morning: 3 eggs with grated cheese. However, (this will be sacrilege to many) I used the microwave! I find the trick is to set the power to 50%, stir often, and remove the eggs when there’s still liquid visible as the eggs will continue to cook. I also sprinkled Tabasco over the eggs before eating.
I’ll soon be eating (air fried) halloumi slices and salad for lunch. Unsure what I’m making later (was a lentil lasagne yesterday, but that was leftovers), so need to cook from scratch tonight.
