Veggie Curry

I did like a takeaway curry but curry sends my blood crazy. I’ve been working on a veggie curry and it's not to bad, :D ideal for anyone like me who misses the takeaway fix.
It does make a large amount I freeze the excess.


Curry
2 large onions (chopped)
3 cloves of garlic (sliced)
2 medium potatoes or sweet potatoes (chopped)
1 small pack of mushrooms
1 pepper (chopped)
1 tin chopped tomatoes
1 tin pinto beans
1 tin chick peas
1 cup dried green lentils
1-2 chillies (to your taste)
1 sliced courgette
3 teaspoons madras curry powder
1 heaped teaspoon pataks balti paste
1 heaped teaspoon of mango chutney or sliced apple
(It makes a difference)
Salt & black pepper

Hob method,
Boil potatoes and green lentils in salted water
In a small pan.
Wok fry garlic onions chillies in a couple of spoons of oil
When soft add mushrooms courgette and pepper
Add tomatoes curry powder and balti paste.

Add pinto beans, chick peas, cooked potatoes & lentils
Use the water from the potatoes as stock.
Add salt black pepper & mango chutney or apple

Simmer for about 40 min stirring
From time to time and its ready
Best the next day.

Slow cooker Method.
Fry garlic onions chillies
Cover bottom of cooker with potatoes and lentils
Add onions garlic & chillies
Add everything else and add just enough
Boiling water to cover
The lentils will use some of the water
Cook on auto for about six hours.
