Dare I say, the other way of doing it is to bump your Lantus up slightly so it makes you hungry and you will "eat to the insulin". Not normally a good idea but it might be a good plan for weight gain if you are struggling? Just remember to eat good things not **** - carry "good" snacks.
Actually fat-rich foods are probably best and safest. But a little extra insulin will ensure you use that dietary fat to build body mass.
