I thought this might help some of the newly diagnosed to understand carbohydrates.
Here are some extracts from the article :-

"Carbs are not classed as essential nutrients for humans. We could all get our energy from fats and protein if we had to. However, our brain requires carbohydrates, specifically glucose. Neurons cannot burn fat".

"Every couple of decades, some breakthrough appears which tells people to avoid all fats, avoid carbs............."

"Carbs have been and will continue to be an essential part of any human dietary requirement for hundred's of years unless a fundamental mutation occurs".

"Saying that a country's body weight is a problem is due to too much or too little of just one food component is too simplistic, it is a bit like saying that traffic problems in our cities are caused by badly synchronized traffic lights and nothing else".

If you randomly selected 100 adults who had been lean for the last 7-10 years and another 100 people who are obese today and asked the question, "Have you been on a low fat diet or a low carb diet in the last 10 years?", the number of obese who answered, "Yes" to low fat and "Yes" to low carb would be dramatically higher."

You will also see from this calculator that the Institute of Medicine recommends a minimum of 130 grams of carbs per day, which is the minimum of usage by the brain.

Don't forget that carbs come from many sources including veggies, legumes, packet goods and fruits and many tinned goods. Complex carbs include cereals, potatoes, bread, rice and pasta, depend a lot on your tolerance and vary between individuals.
