"What have you eaten" Parallel Chat

Thanks all, it's wonderful to hear people are interested in meeting!
@Annb , I will travel 'up north', as the English call it, but Liverpool and possible the Lake District are still way too far down south to be anywhere near you.

And yes, taking care of myself too, as proven by my cutting the whatsapp conversation with Astrid short yesterday.
I'm still feeling well, depression hasn't reared its ugly head again despite life throwing all kinds of stuff at me, I'll be fine!

Here's the thread on the meet up in Frinton, please reply there if you'd like to join so we can make a reservation!

Hope that the cremation went well and pleased you were able to say a quiet personal goodbye too very difficult always but even harder when it's sudden like that.

Love idea of you going swimming afterwards and spending time with a friend. Keep taking care of yourself as you take care so well of your family, friends and neighbours.

I would have loved to have come along to meet you and others ( although I live a long distance from there ) but we already have a family birthday event booked in that weekend - youngest sons. I look forward though to hearing about it and seeing the photos.

Aw, too bad, I would have loved to meet you!
The cremation was as good as it gets, some very moving speeches, lots of people, lots of time to spend afterwards having a drink and a bite in the sun after earlier thunder storms, very happy it went so well.
No swimming, my friend didn't contact me and I was very much emotionally drained so I didn't contact her either.
I did get another emotional and desperate call from the other friend, which thankfully didn't last too long, happy to be there for her on another day again, jut not now.

I did cook yesterdays planned meal, turned out very good!
Something based on my fathers spaghetti sauce, served on sautéed bok choy instead of spaghetti.

Between cooking and eating I visited neighbour Tale for a short while. When he asked what I came for, I explained 'nothing special, just spend a little while with a mentally healthy person after everyone sharing their misery on top of this cremation if that's alright with you'. Not much talking, he was cooking, but it did help, and I spent some time in the garden with a book afterwards.

What a good supportive friend you are being @Antje77. Does make me wonder if your change to long term low carb has boosted your own mental health, you are so much more resilient than a few years ago. Just a musing, no answer required!

Still poorly myself, really knocked for 6 but did manage to accompany my host to the supermarket then to the beach for a very short stroll after dinner..
Food has been yoghurt and seeds, lettuce wraps using last nights mince, a nut bar, salmon and veg. 1 cracker with cheese.
Cough syrup is full of sugar as are the throat lozenges but needs must

I don't think it's related to low carb. The mental health improved a lot starting around februari, and I've been low carbing for at least 7 years. Which would be a bit of a late reaction!

I hope you'll feel better soon!

Perhaps the change in your relationship with Tale has helped to lift your spirits @Antje77. Then there's the cold water swimming. That too could have boosted your general well-being.

I am thinking about breakfast, but can't decide what to have. I could have "huevos rancheros" but I don't feel like it. Have to do something soon because it's leg bandaging day and I have to get ready to go to town.

Was bad yesterday. I'd made some wholemeal soda bread to take with me to a pot luck lunch to go with a vegetable dish I'd made. The dish was not a success so I didn't take it, or the bread. Had a little piece of it to try and ended up having several pieces - quite small, probably no more than 2 slices of normal sized bread in all. It was lovely! I've put the rest away in the freezer to take the temptation away. Result was BG kept going up, but did come down again. Rising again this morning with no food, so there is a bit of a hangover from yesterday, it seems.

Going to see if I can do something with the failed vegetable dish for a 2nd meal today.

Please don't feel like an outsider, we're all a bunch of different folks - I'm sticking around for the company, interest and support although I feel a bit ashamed as I am currently relying on medications rather than taking control of my diet as I should - I don't post much about what I eat at times like this because I don't feel good about it, but I feel safe and welcome here...

And so should you!

I would love to come and meet you all but it's more than 4 hours journey for me! I'm still very tempted - will have to think long and hard about it!

Good thing this thread isn't in the low carb section, I had bitterballen for lunch to celebrate my aunt's birthday. Didn't go too well, despite prebolusing...
Still, they tasted very good!

is that the same thing as American Butter balls - just frozen butter deep fried in a batter?

Not at all, never heard of something like that.
They are a thick meaty stew like filling inside a crispy batter and deep fried, usually dipped in mustard.
Utterly delicious, and a nightmare for diabetics!

(Picture taken from Google, forgot to take one before we finished them.)

And here's me lying in bed really hungry after lecturing my host about how good intermittent fasting is when you post this!!!

The failed vegetable dish actually tasted great - improved by sitting overnight obviously. It still looked awful but I didn't have to worry about that. There's lots more of it so it will be breakfast as well.

I could use it as a filling for wraps or filo parcels and use it for a "pot luck" contribution another time.

I've never had any of the American style Butter Balls either - they are reportedly delicious, smothered in powdered sugar but I suspect, not for me or any other diabetic. Not even sure I would want to try them - the only flavour being sugar and butter, much as I do like my butter. I do like the sound and look of your Bitterballen though.

Finally getting over this nasty flu, think it must have been Covid related, such lethargy and fatigue.
Had a couple of migraines too unless it was very very stressed sinuses. Might actually get to enjoy a day out tomorrow, its supposed to be my holiday after all!
Yoghurt and seeds and an apricot. Hard boiled eggs and cheese. Burger and mushrooms

I had bitterballen in the Netherlands. Very tasty. Cross between a crocquette and an arancini but meatier
