"What have you eaten" Parallel Chat

Happy new year everyone!

I found the courage to cook a proper meal, despite the traditional hangover. Sauerkraut mash. So I thawed a piece of pork belly, made cauliflower purée, wanted to add the sauerkraut but it had gone off.
Granted, the date on the package was 31 dec 2025, how did they know?

Shops are closed so no idea what my evening meal will be. Used up my cooking courage so I expect it'll be a LC sandwich and finish the sauerkraut tomorrow.
 
Hoping you are feeling better this New Years Eve and that 2026 is a good year for you.
There seems to be so many bugs around - I hope yours is retreating into the rear mirror!

I'm feeling much better, it didn't really amount to more than a couple of days thankfully!

BG has been all over the place this morning - started off at 15.9 - Insulin to correct that, but it then dropped to 3.6. Had a cup of hot chocolate and Libre has just warned me that it is going high again.

Thin cut cold beef for breakfast soon.

Something with reheated beef and butternut squash for 2nd meal - I have to get Neil to cut the squash into chunks for me though - my hands won't do it.

Ah. That was it. I didn't think about that either.

BG still all over the place - ranging between 3.6 and 16.0 and I've only had that cold beef, a drinking chocolate and tea all day. I've baked off some of the butternut squash in some olive oil, chicken "powder" and curry powder and just added chunks of beef, some crisp fried onion and double cream and put it all back in the oven to reheat. It will be ready soon.

Ah thanks for that clarification - I was just being lazy and took AI at its word, since it's just about a condiment/spice. I agree it makes sense not to post AI generated "information" about diabetes or nutrition and I can understand why a blanket ban is necessary.
 
I did find the same info you did, @jpscloud . Unfortunately the only ‘reputable links’ seemed to be sites for sales. Even Britannica website had AI info, but did justify by saying it may not be accurate.
What I did learn is that I would like @Annb to share the spice. Would go well in a chia pudding.

With your recent pain, it could just be that you have something brewing messing up your BG.
You have gotten very good at spotting patterns in your numbers and adjusting insulin and food accordingly, despite completely unhelpful advice from various HCPs over the years.
So I would expect this is something outside your doing, hopefully it'll settle soon!

Just need to get these hands working again and I have a recipe I'd like to try - ma'amoul. It looks like a very sweet biscuit filled with dates and nuts. Not that I could eat them, of course, but I could make them for visitors.

I just looked them up on google and they sound amazing.
We'd just need a perfectly timed hypo to eat one.
 
Today’s been fairly simple for me: eggs and wholemeal toast for breakfast, chicken salad for lunch, and planning to eat fish with veg for dinner. Trying to keep it balanced and steady rather than fancy

Always interesting seeing how differently everyone eats and what works for them.
 
Just had the last of the beef and squash for breakfast. I'd added some coconut milk and set it to reheat on the stove. Then I fell asleep for about an hour and woke to a kind of caramelised smell. So, it was a pretty dry mixture after all. Very tasty though.

2nd meal is planned to be some home made sausages with onion gravy. There's still half of the squash, roasted separately, in the fridge but I think any more of that today would be more than my insides could cope with.

BG is still too high but I'm leaving it alone in case taking extra insulin sends me back down into hypoland.
 
Carby breakfast - my bg usually settles down quite well because I eat just before my shower, and then I'm moving about quite a bit until lunch.

I had swedish chicken meatballs with broad beans for lunch, and for tea I think it will be fish with vegetables.
 
Tried to find the box of sausages in the freezer, but my hands wanted nothing to do with the cold so I couldn't sort through the drawer. Just took a box of something or other out and a small bag of chicken thighs. The something or other will defrost for this afternoon and the chicken will defrost in time to make chicken and mushroom soup tomorrow. Sausages must be there somewhere, but will have to wait until I can get my hands working a bit better.
