I'm going to have a bash at the coconut milk version of the chia pudding for tomorrow. </p><p>Lunch: Leftover frittata from last night with homemade coleslaw. A couple of fresh Ottolenghi Swiss LC cookies fresh from the oven with an almond milk cappuccino with splash of cream. </p><p>Dinner: Cottage pie with celeriac mash (with cheese, butter and a couple of spare egg yolks knocking around) and broccoli. Small piece of Earl Grey HC Supermilk. Lots of hot decaf tea.</p><p></p><p>We're both feeling anxious tonight as my other half is back at the Eye Hospital for treatment for maculopathy tomorrow. It always comes around so quickly (every 4 weeks <img src="data:image/gif;base64,R0lGODlhAQABAIAAAAAAAP///yH5BAEAAAAALAAAAAABAAEAAAIBRAA7" class="smilie smilie--sprite smilie--sprite3" alt=":(" title="Frown :(" loading="lazy" data-shortname=":(" />), but at least the treatment seems to be working. You'd think it would get easier, but every time he is terrified. Less about the injections, more about the potential for bad news. It's really tough for him.
