Anne, a couple of things when going carnivore: Firstly, weight gain is often because your digestive tract is adjusting and movement through it without all the fibre makes things back up for a bit. It is quite impressive how bowel contents weigh so much ;) In my case, there was a short adjustment period and then things worked better than they ever did on veg. lol. As for raised glucose levels... I found that I need to do keto carnivore. Too much protein (for me) leads to glycogen storage, and protein converted to glucose. If you are still on insulin, I can see how that wouldn't be ideal. For me, the answer was both easy and simple: less meat, more fat, in keto macros. Problem solved. I honestly don't think trying a different way of eating for just a week is giving it a fair chance. I would say the same about the Eatwell, Vegan, Pescatarian, or Nutarian ;) If I started trying to reintroduce veg at this point (shudder) it would take weeks or a month for my body to adjust. It has been veg free for 2 years now. I would need to give it time. We eat a certain way for years or months, and then switch to something different? Of course there is a transition. Its just common sense. I do wonder how many people get scared off LCHF because they get carb flu, and then say 'it didn't work for me' when if they had stuck with it, and educated themselves about fluids and electrolytes, they would have taken to it like a duck to water. Sorry, ranting a bit. I had a friend who tried 'low carbing' and 'felt dreadful' and now lectures everyone on how awful it was. The reality was that she low carbed Mon-Fri morning, and then had 2 takeaways on Fri and Sat, and a roast dinner with all the trimmings on Sundays. And guess wot, she never fat adapted, and never saw any low carb benefits... The same mindset applies to switching to, or from, carnivore or any way of eating. Sorry, not ranting at you and your choices, just the fact that people don't seem to realise that these things take time, adjustment and some acceptance that it may take a little while.
