Turned out well and managed to get the shortcrust pastry super thin and crisp so I felt able to have a slice with mixed salad. I also had a spoonful of Morrocan salad which is my version of a cauli one I had out a year ago which is florets rubbed with Ras al Hanout loosened with oil and baked. Then stir in chickpeas and sprinkle pomegranate seeds then blobs of Morrocan humous and Greek yogurt and top with fresh mint leaves. (goats cheese was used in the original recipe but not to everyones taste). This time I used chunks of Butternut squash instead of cauli and it worked really well other than it was softer. Both sons & partners love BS. Otherwise made a big seafood paella (Bomba rice)using lots of fresh prawns, mussels in shells (essential for taste), squid rings. I picked out a small spoon mainly the rice clinging to the shellfish. I didnt dare think about the carb value but I ate less than the others and that was it for the rest of the day. Thats my excuse! Three of my inner circle are vegetarian and it actually worked out quite well. Lots of French rose for the girls and Heineken 00 for the boys! </p><p>Hope you all enjoyed your Coronation gatherings.</p><p>Today same brekkie</p><p>Lunch was a Ryvita with Dairylea and tea. </p><p>Supper will be Thai chicken stirfry with rainbow pepper strips.</p></blockquote><p></p>
