This thread is really helping me stay on track. Have had so.e bad headaches and I think it may be this diet but I know they disappear in time.

Breakfast today was plain yoghurt and berries.
Lunch is a scrambled egg, frankfurter sausage and mushroom with some bacon.
Dinner will be fish and vegetables. Need some ideas of low carb sauces to go with my meat and veg in the evenings as finding it quite dry.
Then before bed will be a handful of almonds.
My blood sugars have all been below ten which is amazing for me. Before this way of eating I was on a rollercoaster of highs and lows. In the twenties and then in the twos! Cannot wait to see my next hba1c! Usually dread it.

How about Sauce Albert?
Serves 4
1oz butter
2 shallots finely diced
2fl oz white wine
4fl oz double cream
2 tbsp horseradish sauce from a jar (or to taste as heat varies)!
Melt the butter in a pan, add the shallots and cook gently for 5 minutes.
Add the wine, bring to the boil and turn down to a simmer.
Add the cream and horseradish, season and add a little lemon juice to taste.
Got this recipe from BBC Good Food mag and it's great with pan fried white fish like cod etc. Having it tonight

I agree, I'm usually ending up discarding egg whites when making bearnaise or hollandaise, great way to get the yummy yolk.Hi,
Why do you discard the egg yolk?
That's the best bit.
I was led to believe the egg whites contain the protein which is what i was more interested in
