What is going on?

So I am a non diabetic that had suspected gestational diabetes (unconfirmed) due to 3 reads over 7.8 after heavy carb take away. Due to both my brothers being type 2, the hospital treated me as a precaution.

Ever since I have continued to eat low carb and monitor my glucose for obvious reasons, however due to Covid I have not been for my postpartum checks. My Hba1c was taken at the end of my pregnancy and was 33.

My numbers have consistently been within normal range, fasting 4.2-4.6 and post meals anywhere from 5 to occasionally 6.8, but naturally I had been eating low carb with the occasional pasta etc which again didn’t spike me at all.

In the early hours of yesterday morning (around 2 AM) I decided to scoff an entire large bag of Doritos, around 100g of “bad” carbs, and awoke to a fasting at 8.30 am of 5.2. Since yesterday my numbers have been higher. Fasting again this morning was 5.2, and post breakfast (25g carb) I was 7.4 at 1 hour and 6.4 at two hours.

Surely I haven’t developed prediabetes/diabetes overnight? Is this a response to the Doritos since I haven’t been having that kind of thing in months and my body just wasn’t ready? Will my body recover from this?

The only other thing I can think of is the test strips or monitor being dodgy, as it had been sitting in my bathroom window under scorching sun all day. I did get a couple of “e7” errors with new strips from the same batch of strips today (accu chek Performa nano.)

The glucose numbers are still within a good range and will still fluctuate a bit when you eat regardless of whether you have diabetes or not. One thing to make sure with the strips if you think they’re not working properly is to wash your hands before every test in case you have touched something sugary and you prick your finger, the sugar will then go into the blood your about to test and make the reading false.

You already know you've got an increased risk due to your brothers having type 2 and your query gestational diabetes.
Having a meter is a great idea as you will see just how your body reacts to a Doritos binge. Your hba1c was totally fine though so a few bad choices aren't going to turn you diabetic overnight. Its the choices you make consistently that will make the difference to getting a diagnosis 10 years down the line and if you continue you low carb it simply means you will be eating great quality foods, be able to manage your weight better etc. etc. Becoming diabetic is a gradual process in sum but why not continue as you mean to go on? If you slip up then just keep practising...
