What Other Factors Can Affect Postprandial Readings?

I had the same meal twice, with radically different 2-hr readings.

Yesterday I rode my bike for an hour, it was hot out, I had dinner (which was a little more carby than usual for me). 2 hr reading was 4.8.

Today I rode my bike for an hour, it was hot out, I had leftover dinner for lunch, and 2 hrs later was 7.5.

I can't think of anything I did differently other than time of day. If anything I ate more for dinner than for lunch. I have the same thing for breakfast every day. My hands were clean when testing.

I take 500 mg metformin at breakfast and dinner, but didn't have it until 2hr after dinner (after I tested 2hr post) last night since I ate out.

Can time of day make that much difference? Are there other factors I should be considering? Thanks!
 
Heat, humidity, activity, time of day, amount eaten, what you ate at other times, hydration, illness, stress, the phase of the moon, what color shirt you are wearing, etc. Sorry if that was a bit silly but really there are so many factors that come into it and so many hormones at play that there is really no way of telling. It could be that if it is more carby food than your body is used to, two days in a row is too much. I have some wraps that I found that are quite high fiber, I found that I could have one and it was fine. The other day I got lazy and had one for lunch and then one for dinner. I woke up the next day with a fasting of almost 8 and up 4 pounds. I guess I went over some line that my body has drawn in the sand. Live and learn, I won't do it again.
