Type 2 What to eat with soup

I love soup. Still gutted I can’t eat canned soup because I would live on the stuff in winter. Especially Heinz vegetable. Soooo thick and lovely.

But I have a soup maker so I can do my own.

Only issue is what to have with it. Can’t havebread or crackers so what do you guys have?
I used to love dunking bread or crackers in and then Eating it.

Getting hungry just thinking about it
 
You could make your own low carb bread or crackers.
This is quite a quick and easy recipe. Makes about 3 slices. It does taste a bit 'eggy'.

Low Carb Mug Bread

3 tablespoons Almond Flour
Half a teaspoon Baking Powder
1 Egg
1 tablespoon Butter

Mix ingredients. Microwave in mug/plastic/glass container for 90 seconds.
 

If I still want more when I finish a bowl of soup, I'd tend to just have more soup. That said, I really was never much of a bread eater, so I don't really feel that sense of loss
 

Anybody tried this in a frying pan/oven, as I don’t have a microwave?
 
I had the same problem - couldn't eat soup without bread. I make my own soup and put it in a mug to drink. Find I don't want bread any more by drinking it.
 
I agree about missing dunking the bread. I have developed an odd pairing for soup now. I melt some cheese til it goes gooey (microwave or pan). Let it firm back up a bit. Dunk that. Or sometimes just a good chunk of cheese on the side. I am constantly disappointed with bread alternatives being nothing like bread so have just gone for something not even attempting to be the same.
 
I have Ryvita I know some here have Nairn oat cakes. My soup maker packed up and was the second one to do that and I do miss it so will have to consider buying a new one what is the make of yours ?
 
Yes - I absolutely love cheese with soup. After more than 2 years on low carb/keto I find the thought of dunking bread in my soup absolutely repulsive - so strange how tastes change, because I thought I couldn't live without it before low carb.I

Actually - writing this reminded me that I also didn't think I could survive without my morning cappuccino sprinkled with milk chocolate flakes. Of course that was before I discovered that if I added a tsp of cream to my Nespresso I could actually taste the coffee.

I've only done it in microwave. I wouldn't think it would work in frying pan. I don't know about oven.
It does quickly rise quite a bit in microwave to almost fill mug.
 

I have made homemade soup lots of times and last year I was made mushroom soup with parmesan crackers/crisps............absolutely delicious, best I have ever tasted.

Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart. Bake for 3 to 5 minutes or until golden and crisp.

This morning I read about someone using this recipe it in a pan more omelette/pancake style. Might be worth a trial.
 
This looks similar to @Goonergal ’s recipe, sorry I can’t find the original link but here’s my note from my iPad! I’ve made this and enjoyed it. I think it would go well with soup.

Isn’t ryvita carbs? I’ve avoided it since being type 2.

I've made @Prem51 recipe a few times now and it toasts great and really good with soup or stew, I add some dried herbs or a a spoonful of Parmesan and/or garlic powder deals with the slightly eggy taste.

Just a little point if you are on very low carb and count your carbs be mindful with veggies in a soup - they soon add up
