I've seen people refer to mug cake a few times. I'm desperate for a treat tonight after a stressful day. I've looked for recipe but can't find it. Can anyone tell me/ link me to recipe please?

Have a Google of one minute low carb muffins - there's dozens of recipes, and once you've go the basic idea you can modify and add different bits and bobs to vary them. I often make one for my supper.

It wasn't bad!! Didn't out quite enough sweetener in so it was a little bit bitter but not bad for a first try!! Really like the peanut 9 bars!!
 
Just made a mug cake myself
(Mr B has been torturing me by eating the largest cream scone in the world - slowly - bought from the deli at the end of the road)

I made the mug cake plain, then surgically inserted a square of 70% dark choc while it was still hot, so that it oozed molten choc when I spooned into it. Will add some peanut butter next time, too. :wacky:

Think I used a smidge too much baking powder, but hey ho, ya liv n learn.
 
One of the things I've learned is not to add too much baking powder to any of my low carb baking as it can make the mix quite bitter; I've been working on the assumption that I need to add more to flaxseed/ground almonds/coconut flour etc to.help things rise, but got over enthusiastic and had a batch of rather vile tasting muffins. I had to eat them as I had no more ground almonds for the week, so lesson well & truly learned.... :hungover::hungover:
