I've just read something on another forum stating that though sweet potatoes are lower carb they have more sugar. Can anyone clarify which is best please?
Also I'm going to try cooking/cooling and reheating to increase resistant starch. Has anyone any thoughts on this too?

Thanks a lot

This can depend very much on how they are cooked. Of all potatoes and the method of preparation sweet potatoes have the worst affect on bg (when baked) and new potatoes (when boiled in their skins) have the least affect.

In my humble opinion it matters little what colour the carb comes in, it is still a carb and the only way to see if one can tolerate it is to test.

Neither is that good. They both have similar amounts of carbs in them.

Cooking/cooling/reheating is a method some people use and seems to have better results.

If potatoes could be eaten uncooked, as perhaps sweet potatoes can be, they apparently would not raise blood glucose much. However, because cooking breaks down the internal structure and turns a complex carbohydrate into a refined processed carb it is immediately turned into glucose in the body when it hits the small intestine.

There is a couple of very interesting discussions with Ivor Cummins and a food scientist on his blog showing how the gut deals with foods and what hormones are released at different times during the foods transit through our digestions.

I have found both ordinary and sweet potatoes spike my BG, whites fairly quickly, but sweet potato waits for three to four hours before coming up behind and giving me a kick! Beware the sneaky one. Never bothered to try reheating either, I just don't have potatoes, full stop. There is plenty of other good food out there, so no need for starch bombs.

Have you tried butternut squash as an alternative? I find I am ok with that. It cooks very quickly too.

Too late I've just had some! I will test in a couple of hours and see what the good/bad news is.

I don't mind butternut squash in soup but as a potato substitute I think I'd rather do without...which I can easily. I have just started fasting today so wanted to up my cals a bit so I thought it sounded like a good idea. I will know soon I guess!

Slight contradiction there?

I'm not fasting completely bulkbiker! I am going to eat within a 6 hour window, so had something at 12.30pm and at 4.30pm and will fast until tomorrow at 12.30. At least that's the plan anyway.... Oh and my blood was 7.1 so quite pleased.

What was your pre-meal blood glucose level?
