Wifey has asked for a LC lemon cake

Gonna adapt the carrot cake receive for a lemon cake. I already have some low carb lemon frosty from the low carb mega shop

Any ideas for receipes?
 
If you are going to adapt your cake recipe you don't need another one, but grate the peel off the lemon and use all the juice of a lemon in your cake.

Try this cake, it always turns out well, you can easily turn it into an orange or a lime cake as well. I add a few drops of lemon essence for a more intensse flavour, then as topping and filling make up a lemony frosting with cream cheese. If you have no lemon essence at home, just use a little bit of fresh very finely grated lemon zest.

It's not vital in the breakfast loaf; sub some soy flour or more almonds instead.

You can really go to town on it and make a lemon filling/topping as well = mix together cream cheese, sweetener, lemon rind and juice, drop or two of vanilla essence until you have a nice smooth, creamy consistency.

Looks lovely but how many calories in a slice like that? Id only have to look at a slice of cake that big and I'd put on a couple of lb's :lol:
