i have a good supply of wild game my freezer is full venison,pheasant,duck and pigeon, this meat is very lean and I'm looking for some good recipes that would fit the bill for a type 2 like me , I would love to hear them as I think this could make a nice change in a diabetic diet. Any ideas???
I am the forum's official taster since 10 seconds ago and I have to come round and sample it all to make sure it's suitable. Seriously though, surely they don't require special recipes since all are good protein and the amount of fat you add, if any, depends on your diet?
Your right , they don't but the wife tends to make a lot of stews with it which aren't so good for me , just wonderd if anyone had other ideas . Your welcome at anytime to come and taste .
Yum thanks. Stews are often thickened with some sort of flour it's true. I use buckwheat (it's not a grain) which is ok for me but you'd have to try it. It makes nice smooth sauces and adds no odd flavours.
Be interesting to hear of other ways to use game meat. Venison burgers, definitely. Roast birds?

With the pheasant I normally skin the bird as they take to long to pluck cover with bacon so it doesn't dry out and roast think that may still work
