I had a cooking day yesterday and one of the recipes was Whitby Jets mincemeat, inserted into almond flour pastry for my annual mincepie fest

I have to say the recipe is gorgeous, tho I added beef suet instead of butter and next time will make up my own no sugar candied peel to add in -

The almond pastry was a revelation it tasted amazing (since I've not eaten pastry or even pastry texture since May) it wasn't particularly almondy and I was impressed that I just pressed the mixture into the bun tin moulds with my fingers, without greasing the tray and they popped out perfectly and held together well - so the mix could certainly be used for pastry moulds filled later with something cold.

Anyway, they tasted perfect (everyone agreed) I had one with loads of cream and my 2hr + reading was 7.3 so high for me but as a christmas treat well worth it. And with an addition of grand marnier to the fruit ahead of time I think the alcohol may well bring the reading down a little further :thumbup: :thumbup:

So thank you WJ for saving my Christmas after all - and I hope you are making a good recovery

Oh thank you for the feedback, I am so glad you enjoyed the mincepies.
Made me giggle to read about your slight adaptations to the recipe, I do that all the time, I can't leave a recipe as is. The mincemeat is much lower in carbs than standard versions but still delicious as you have found out.
Oh I do wish I could do some cooking or baking, still immobile but getting better. Had another MRI scan and the doctors are pleased with my progress, in 3 weeks I should be able to start walking using crutches.
