I just made this one up [and tried it out]
Works fine.
2 large eggs,
2tablespoons flax meal I ground some seeds for this.
3rounded Tbspoons wheat gluten,
1/2 teaspoonful salt
1/2 to 1 cup milk
Method
Eggs, 1/2 cup milk,
all dry ingredients. whip up thoroughly in tall jug with hand blender.
Check consistency and add more milk if required. Should be the thicknesss of double cream.
Heat pan, with a little oil
add knob of butter and as it sizzles, put a 1/2 cup or so of mix in the pan to cook.
turn with fish slice. Don't toss, it's more brittle than using normal flour
delicious. Negligible carb. Greek yogurt on it
