I have an excellent crop of backberrries in my hedge this year. ( they protect us as well as feed us)
Usually, I just eat them off the bushes, but this year, they are huge. I collected a couple of pounds and stewed them up with some Xylitol and Splenda , (which I got in Waitrose) then I put them through the blender and a sieve. I now have a bowl full of delicious, blackberry coulis. I shall freeze some and I shall make a Fergus Cheesecake, to have with some and some will get eaten with Double, extra thick, CREAM.
