Evening meal timing and fasting

I'm not spiking but dropping through the night.
I coincidentally had a little cheese before bed last night. Went to bed at 95. Took 2 lantus. 65 at 4:30 and 68 at 7:30. 7:30 is an hour earlier than I've been waking up lately. That could have a bit to dos with it. The cheese didn't stop the drop but today I didn't get the rise. I'm trying to stop the drop in the middle of the night.

Cheese is a fairly new addition to my diet. I haven't eaten dairy in many years. Nor any grains, starches, sugars. Im ultra low carb and the only thing that completely spikes me is carbs. I agree with gut health and probably shouldn't be eating cheese. It's one ounce at most and for now just enjoying it with a glass of wine pre dinner. I'm using it as an excuse to slow the wine carbs. Hahaha. I could of course find something else
