Banana muffins (but you can just as easily bake it as a loaf)
1/4 cup ground golden linseed (must be golden linseed, this just doesnt taste right with the brown linseed)
1/4 cup coconut flour
1/8 cup splenda (to taste or whatever sweetener you prefer)
1 heaped tsp of baking powder
half a tsp of baking soda
1 tsp or more of allspice
3 eggs
1/4 cup plain full fat yoghurt
1 mashed banana
pinch of sea salt/himalayan salt
Beat the eggs, add the yoghurt, banana and beat again. Add in the dry ingredients and beat again.
Bake in 6 standard size muffin tin or use silicon muffin cases for approx 18 mins at 180 degrees C or fan bake 160 degrees or so, test with a skewer, ovens vary.
These are truly scrumptious, you can add a few drops of banana flavouring if you really wanted to, but I think they are fine without it.
