Low Carb Yeast Dough

Never thought its possible to make a low carb yeast dough, but here it is!!

1/2 cube fresh yeast (=21g of fresh yeast just in case yours doesnt come in a cube)
150ml tepid water
1/2 tsp sugar
150g almond flour
125g Quark or low fat cream cheese
150g gluten flour
50g protein powder (unflavoured)
2 eggs

If you use this dough to make sweet buns or a cake, add 5 - 7ml liquid sweetener
If you use it to make bread rolls, add salt and bread spices (eg caraway, aniseed, fennel or dried herbs)

Crumble the yeast and mix with the sugar and tepid water, leave in a warm place for around 15 minutes, then add the rest of the ingredients and work to a smooth dough (use the pastry hooks on your mixer).

I made cinnamon rolls with this, roll out the dough, sprinkle with cinnamon and nuts and a little sweetener, roll into buns, brush with melted butter and bake 175 degrees for around 30 minutes, depends on your oven.

You can of course make savoury rolls or a baguette instead.
