You do know thats impossible, dont you? If you are not diabetic it does not matter what you eat. You can eat a truck load of carbs and still not become diabetic. If you have a genetic disposition to become diabetic then under certain circumstances you will develop diabetes. Otherwise you will just become overweight. Thats why there are a great many obese people do not develop diabetes. In fact, the vast majority of obese people do not develop diabetes despite eating a "humongous amount of carbs and sugars".
The only way a non diabetic can become diabetic overnight is to chop out thier pancreas. Did you do that?
Otherwise all you have done is achieve a certain amount of control, eat stuff that has too many carbs and lose that control. And then regain control. People here do that all the time. Particularly, if like me, you have a weakness for national trust scones.
