Yes it's easier to cook for more .. I love making pots of soup thrn freezing it .. Just to make things easierB: Not normally one for a sweet breakfast but experimented with the Coconut/Psyllium Flat Bread by adding Cocoa Powder, Coconut Essence, Vanilla Essence & a little Stevia. Ate it with peanut butter - not too shabby
L: Tomato, olive & walnut flax muffin with avocado & a couple of spinach puffs
D: Usual Sunday night - 2 Burgen soy & linseed toast with Vegemite, avocado & eggs
My menus can get a bit same same because husband travels a lot & it's a bit dreary cooking for one but maybe this lovely new vegetarian forum will inspire me
B: cheese omelette
L: blueberry chia pudding - didn't have much left from this batch so padded it out with desiccated coconut, walnuts and almonds. Was fab - should do this more often. Creamy decaf.
D: lazy korma - quorn fillets, bell pepper, mushrooms, flaked almonds, M&S korma paste, double cream.
Well for tonight .. It cousus .. With aubergines in a tomato sauce .. With middle eastern style spices ..
And will be having roasted cauliflower in cinimmon and cumin power
With chickpeas in harasas paste .. (Sorry spelling)
Should be lots left for the fridge which will be eaten with whole meal pitta bread and sour cream later in the week ..
A www that's nice @Safi I only know two dishes .. But I do plan to find some more ideas in the new year ..If I could only eat one cuisine it would be a middle eastern one

L: cheddar/tomato/walnut flax muffin with 1/2 an avocado & some mushroom/red wine pate
