Anyone got any tips for making a decent cheese sauce without using any flour?
I put a handful of grated cheese into a bowl.
Add a dash of cream, and microwave until the cheese melts.
Stir.
Adjust to the desired consistency using cream, milk or water, depending on your preference.
All quantities adjustable.
takes less than 2 mins.
You can add all sorts of goodies too - from worcestershire sauce, to garlic powder, chili. paprika, herbs, mustard and horseradish, if you like. although perhaps not all at once
Work today so brekky and lunch were portable
B - full fat yoghurt over mixed nuts and seeds - with a teeeeeny drizzle of agave nectar.
L - mixed green salad with mayo and mackerel strips - cucumber batons dipped in tbsp cream cheese.
D - roast lamb, cauliflower and a cheese sauce (made with 1 level dessert spoon flour), 3 strawberries chopped up with a splosh of cream.
S - 1 babybel cheese

Seems like an awful lot of carbs! It’s good you are losing weight but are your BS levels still not too high?I'm mainly concentrating on no added sugar - I've lost 8 pounds in just under 5 weeks.
I find that anything labelled NO FAT is usually high in sugar - so much for "healthy"
I've made cake with Xylitol instead of sugar using about 30g less because it's quite sweet, check their Facebook website (also www.totalsweet.co.uk)
To help I write down everything I eat and drink during the day. I've found it keeps me in focus.
Monday 12th-
Breakfast- 2 Eggs on toast, coffee
Lunch - Toast with olive scrape and Stute marmalade, coffee
Mid afternoon - Skinny latte
Evening meal - 2 M&S Corned Beef Crispbakes, Salad & low cal/fat crisps
Evening snack - 2 Ryvita with low fat cheese, coffee
Today
Breakfast - No sugar Cheerios with unsweetened Alpro Almond, coffee
Lunch - chicken sandwich with lettuce and tomato, coffee
Evening meal - fresh salmon with broccoli and potatoes
Evening snack - as Monday.
Looking at your B, L & D meals, what carbs are there in those foods? Don't mind me asking, I hope, as I'm still new to this carb business. I'm eating very low carb stuff., like this morning..porridge chia, yog little cream, few dried cranberries & Truvia. After 3 hrs bloods were 4.3, so had 2 jelly babies slice bread & low sugar marmalade. Lunch was home made veggie soup with chick peas. Don't know about Eve meal yet.Yesterday was:
B: 1 mini babybel, full fat greek yogurt with flax and chopped nuts
L: Avocdo, cheddar & olive mayonnaise with green salad, raspberries & cream
D: Courgetti bolognese with parmesan, cream cheese cloud & jelly
There was a thread this morning about ready made cauliflower rice product being on sale in supermarkets. The thread seems to have disappeared, but apparently it's called Cauli Rice, sold in 200gm packs for £1.99. It will be on sale in Waitrose, Tesco, ASDA, and Holland & Barrett. There are 4 varieties, Plain, Indian Pilau, Lemon Grass & Chilli, and Mediterranean. What's cauliflower rice? Thanks, new and trying to get used to it all.

Was there anything else in it? ie preservatives colourings etc? That's interesting.
We got some plain stuff (think it ws about 200g and cost just £1) from Tescos a few weeks ago. It was nice, and could be spiced at home any way you wanted.

I think that would be the Tesco Cauliflower Couscous - 330g for £1 (on 3 for 2 offer at the moment). That's interesting.

Don''t think so - it was just crumbled cauli in a plastic pot.
Definitely no spices or colours.
We only had it once, because I can buy a whole cauli (mch bigger than 200g) and whizz it in the food processor, for much less money.
So I have been doing that instead.
