Watching Saturday kitchen and they mentioned goose fat roasted potatoes, and I actually caught myself licking my lips and salivating just over the thought of it

Are you doing low carb? If you have one small potato that is about 30g of carb... you could factor that in to your daily carb intake. So I'd say why not have something you like to eat, just eat a small portion of it. This type of food wouldn't be something you'd eat everyday anyhow... more like a treat.

Potatoes are carby - no getting round that.

But cooking them with fat (incl goose fat) will slow their absorption, which slows or reduces the glucose release. Think wide plateau rather than steep mountain.

Armed with your trusty meter, you can always do some experiments and find out your personal tolerances... ;)

One more thing to bear in mind - weight loss is easier if you don't mix your fat and and your carbs. Not sure how important that is to you, but might be worth considering... :)

It is my considered opinion that you should go out and buy some Maris Piper potatoes and some goose fat and cook some roast potatoes. Test afterwards and let us all know what happened so we can claim it was in the interests of science.

In the interests of science the craving has passed but I might try some coconut flour cheesey biscuits shortly!!! Of course only for the interests of science, I'll take one for the team

I say Goose fat is expensive, get down to Lidl and buy a Goose crown (£8.99) there will be plenty of fat for the spuds to swim in :D
As for fish and chips, sadly the portions of chips are huge andd the fish small from a chippy, there is also the double whammy of the batter :(

Lol, if get the humour dude! :D

What I am interested in is what's "Saturday kitchen"? Is it more fun than any other time of the week.? I know mine isn't at the weekend, due to the fact that Friday night I can't be ***** with the washing up!?!

Watching carb porn on the telly - shame on you.
At least it is harmless - hopefully - but you might want to limit your exposure and get out for some good clean exercise in the fresh air afterwards - in the opposite direction to the fish and chip shop.
We went for thanksgiving dinner - I have an American son in law, and there was a huge heap of goosefat roasted potatoes, which I totally resisted. I have been doing low carb for decades and it is surprising how easy it gets to make the good choices. When it suddenly gets serious, not just for weight loss it is surprisingly not a problem to have the cauliflower option.

I can eat quite a lot of carbs now I've got things under control, but potatoes aren't one of the things I can eat: it doesn't seem to matter if they're boiled, mashed, roasted or chipped: they send my blood sugar sky high :(

I have roast celeriac instead of potatoes now

Yeh I must admit potato is a dodgy carb for my sugar levels too... if I eat a straight jacket potato or boiled I tend to hypo about an hour or so after eating it. If I have mash or chips my sugar can go either way, but usually sky rockets. When I did the low FODMAP diet this is the problem I was having with the carbs allowed on that diet... most of them I'd just hypo after eating them... mostly vegetable carbs. I can do the same with rice too sometimes, but if I eat pasta I never hypo after eating that. It's strange how our bodies handle different foods.

It never ceases to amaze me how different we all are. :)
Potatoes aren't great for me, but they are FAR better than any of the grains. Those spike me to the skies, while potatoes are kind of doable, in small portions.

Whenever we go out I indulge in maybe 1/4 to 1/3 of a portion of chips, whereas I reject anything like bread, breadcrumbs, and gloopy sauces thickened with flour. :)

So, @Terryrhino
In your fish and chip scenario, I will peel the batter off the fish, and eat about 1/4-1/3 of the chips, and be OK.
Of course, I would be better with a salad and no potatoes at all, but hey, I'm human! (well, sometimes)
- and given the choice of different forms of potato, I would go for chips, roasties and dauphinoise potatoes over baked, boiled or mashed, simply because the fat slows down the spike. Terrible, innit? FORCED to eat chips rather than boring jacket pots. Such a hardship.

Mind you, I still avoid potatoes on principle, unless we are out, and I am having a treat. Never buy them. And never cook them myself. That would be a very slippery slope!

I indulge in 2 pieces of roast spuds cooked in goose fat every Sunday. I can also eat up to 10 chips. It's flour that is my nemesis.

Love how we are all different, but if we eat to our meters we should be fine.

My advice would be to leave the starchy interior for others, but gronff down the skin !!!!!!
