Chickpea Alternative?

I've just seen this recipe on Sainsbury's site and really fancy it (with reduced tomatoes). I could just make it without chickpeas, but is there something else I could add instead?

Ingredients
For the traybake
  • 1 red onion, finely sliced
  • 600g tomatoes, halved
  • 400g can chickpeas, drained and rinsed well
  • 2 cloves of garlic
  • ½ tbsp olive oil
  • 4 large cod fillets
  • ½ lemon, juiced
For the chermoula
  • 1 tbsp fresh chopped coriander
  • 1 tbsp fresh chopped parsley
  • 1 red chilli, deseeded (leave the seeds in for additional heat)
  • 2 cloves garlic
  • 2 tsp paprika
  • 2 tsp cumin
  • ½ lemon, juiced
  • 1 tbsp sherry vinegar
  • 2 tbsp extra virgin olive oil

Method
  1. 1°C

    Meanwhile, make the chermoula. Put all of the ingredients in a mini food processor and blitz until paste like.

  3. 3
    Remove the vegetables from the oven and nestle the cod fillets on top. Squeeze the lemon juice over the fish. Return to the oven for another 15 minutes, or until the fillets are cooked through. Remove from the oven and top each fillet with some of the chermoula.

well kidney beans , but maybe they Arent any better , otherwise mayby macadamia nuts

When I did I found chickpeas were ok for me.

I do cod wrapped in prosciutto baked in the oven with some butter on it.. much lower carb.. maybe serve on wilted or creamed spinach.
Forget the chickpeas and tomatoes?

I'm with BB, just drop the chickpeas and ditch or halve the toms. Mind, I hate any kind of peas or pulses so would probably just increase the protein. The chermoula sounds nice. Might try that.

If that recipe serves 4, (going from the amount of cod), a can 400g of chickpeas has about 40g of carbs, by the time you drained them out, so they add about 10g each.

If you want to go less, I've had a look at the recipe, I'd probably halve the chickpeas, and add fresh spinach.
(Leaf spinach, with the stems, rather than baby spinach, which hasn't quite got the same bite when cooked)

Although most pulses only affect me slightly except for baked beans which have suddenly started affecting me quite a bit.

Ooh. I just ditched all pulses when I was diagnosed so have never checked. I'll have an experiment. I do like the cod/prosciutto/spinach mixture - a friend made it for ma a while ago and I loved it. Will give that a go too! Thanks. Isn't food brilliant ;-)

I think that would work well with cubes of butternut squash ?
Or celeriac ?

Texture is wrong. Too squishy like the fish.
Maybe whole button mushrooms?

Or maybe roasted, then tossed in at the end, to give a bit of a hard crunchy alternative?
