Type 2 Using ham as sandwich

So just planning my food and have seen ideas where you use lettuce leaves.
I can’t have lettuce (IBS) so was thinking slices of ham would do the trick.
Any thoughts? Has anyone done this before? Any other ideas?
 
Yes I've done ham outside cheese inside and vice versa,... jolly nice too..
Any sliced cold meat will do just as well.. cold beef with horseradish and cheese is good too..
Bacon and cream cheese too...
 
Hi @Cana slices of ham would work well. Haven’t tried it myself but know others have. Could also use slices of cheese if that’s a food option for you.

Diet Doctor has a recipe for a breakfast sandwich, which I do eat regularly- 2 fried eggs (over easy) housing either ham or streaky bacon and cheese. Could easily adapt to include other things.

I have rolled up sliced ham filled with cut up lettuce, grated cheese and sliced black olives, leave the lettuce out if you do not like it..

'm quite partial to cold kippers too... :)
I like cold kippers, I eat the tinned ones here as it's impossible to get good fresh Grimsby kippers here.

They are about the only things I miss eating since moving here, oh yeah near forgot Whelks I miss them as well.
 
Smoked salmon, yes. Love kippers but cold, yuk!

Yep, cockles & winkles too.. That was a treat as a kid along with fresh crab.

Not to mention fresh oyster at a stop in a French layby..

Quality!

Snails are the only thing I don't get... It all tends to be overwhelming seasoning & garlic.
 
Prosciutto with Boursin rolled up, sometimes with a little chopped Pamplona chorizo added and a couple of boiled eggs is a favourite first meal of mine.

We get local cockles but they are called clams here, and mostly mussels, oysters and scallops.

Plenty of crabs around in the creeks and rivers around the Bundy area, we have red claw yabbies in the main dam out at the shed.
 
What about gram flour? Is that ok for diabetics? Seen recipe for chickpea flatbread

You’d have to try it and see. Some people get on ok with chickpeas some not so well.
