Low Carb Bread recipe

Does anyone have a recipe for low carb bread that uses less than 12 large eggs?

So far I've tried baking 2 different lots both having huge amount of eggs (1 - 12 large eggs other 10 large eggs), and both tasted like over thick omelets. Don't get me wrong, I love omelets but not 4+ inch thick ones cold lol

So far I think I'm doing well on low carb but really need some sort of bread to go with some of my meals so hoping someone can help please x
 
I use either Keto king bread or Giancarlo Caldesi's sesame seed buns. Keto king uses just 2 eggs and is a yeast bread using wheat gluten, oat bran and flaxseed. 2.2 gms carbs per slice. I make this in a bread machine and Giancarlo Caldesi' sesame bread bun recipe uses almond flour and psyllium husk and 3 eggs and is a soda bread. 2.2 gms carbs per bun. I tend to miss the sesame seeds out. (I have had non diabetics asking me for the recipe for these)
Both work for me. Googling should give you the recipes or pm me and I will copy them to you.

I've also substituted the flaxseed in the keto king bread for lupin flour and found the texture and taste ok as well.

I make 90 second bread with ground almonds- I find adding a little cream cheese cuts the eggy taste.

I intend to try the Giancarlo Caldesi's sesame seed buns today as I have all the ingredients listed but will have to get some wheat gluten and yeast to try the bread. Did a google search for the Keto King Bread and not sure why but got 3 different recipes so will try to figure out how to message you for your recipe :)
 
These are the ingredients I use. Except I miss out the sweetener as I found it just too sweet with it in. Was a bit concerned about honey being added but that it "eaten" by the yeast. Someone (I cannot remember who) said that they have left out the Xanthan gum without it affecting the recipe. I have also swapped out the flaxseed for lupin flour and quite liked the result.
  • 1 cup slightly warm water (23C - 25C / 73.4F - 77F) (240ml/8.1oz)
  • 2 Eggs (lightly beaten)
  • 1/2 cup of Oat Fiber (41g/1.45oz)
  • 2/3 cup of Flaxseed Meal (70g/2.46oz)
  • 1.25 cups of Vital Wheat Gluten (190g/6.7oz)
  • 1 teaspoon Salt (6g / 0.21oz) – spread around outer edge of container
  • 0 - 4 Tablespoons powdered Sweetener (0g-60g/0oz-4oz : 30g/2oz is a good amount)
  • 1 teaspoon Honey (7g/0.25oz) – spread around outer edge of container
  • 1/2 teaspoon Xanthan Gum (2.5g/0.088oz) – spread out evenly
  • 2 Tablespoons Butter (30g/1.05oz)
  • 1 Tablespoon Active Dry Yeast (8g/0.28oz)
  • Macros for entire Keto Yeast Bread:
  • Calories: 1517 cal
  • Fat: 90g
  • Carbs: 35g Net Carbs (162g total carbs – 67g fibre – 60g sugar alcohols)
  • Protein: 169g
If you have a bread machine the water goes in first, followed by the eggs, then the mixed flours. Basically add the ingredients in order following the list through. Just add the yeast by making a well in the middle but try not to let the yeast touch any liquid. Bake according to the bread machine instructions for a basic loaf. I tend to just let if rise as dough, take it out of the machine divide into 2 knock back, put it into a couple of bread tins let it rise again and cook in the over for around 10 mins or sounds hollow when tapped. No reason why you could not make this without a bread machine, there are recipes online to follow.
