2 hours PP normal but spiking after 3 Hours??

I have an interesting blood sugar reading for fast few days. I am type 2 diabetes well controlled by diet alone. On cyclic ketol/lchf diet to High complex carb whole meal moderate fat diet. So far my blood sugar fasting and PP are in nondiabetic range, however I noticed interesting PP reading from past few days. My 2hours pp was 5.7 mmol/l but my 3 hours and 4 hours pp was 7.3 mmol/l. Meal was Barley and vegetable( courgette, bitter gourd and spinach)- basically mainly carbs with no fats or protein rich.
I do not understand why my pp blood sugar is below 6mmol/l after 2 hours but started to spike after 3 hours although I am not taking any fats or protein .
Any ideas???
My fasting blood sugar and hb1ac are all within normal range.
 
As a T2 diet only if I ate the meal you described I would probably see similar pattern of numbers and probably continue to rise after 3hrs and stay higher for longer, you don’t mention the portion size of barley, there’s roughly 45g carb in a cup of cooked barley so very carb heavy and supposedly slow release but all carbs still turn to sugar in the end that’s matterless for T2 diet only. without any fat to smooth it out slightly I’m guessing it’s the barley that’s doing it, if it were me I would cut it out altogether and find a low carb alternative like riced Cauli and add some fat and protein. If you still want to eat it then look at your portion size and test it again until you get results you’re happy with. I suspect you will find you can’t eat very much of it at all. It’s good that you are testing, whilst a Hba1c in the normal range is great and well done for that :) it doesn’t show our daily ups and downs in bs or what is spiking us. Testing on a regular basis to see what a particular food does directly and adjusting accordingly is the best way to go
