Can my BG go down after eating carbs

After 2 weeks of strict no carbs I thought iwould try and see how I react to specific foods I was expecting that buttered toast would result in an increase grease in BG I have been stable at around 6 to 6.5 is there a reason for the Dip see below….

I had a surprising response to a trial of a piece of buttered toast this morning too.
I didn't experience a dip like you though. Looks like you were coming down off a rise so maybe insulin was over responding to whatever caused that rise?
Anyway, my piece of toast had 20 g total carbs and I had a very slow rise in glucose.
So I wonder what your glucose ended up doing 1 hour post and 2 hours post??

The apple represents my piece of toast lol. I was 5.4 1 hour post-toast, and 4.8 2 hours post (not shown here).

After less than an hour my levels returned to pretty much normal e.g 6…. But after reading lots of posts I wonder if I can trust the accuracy. Still change’s should be a reliable indicator….

Agreed, you can get a lot of info from the changes. Yesterday a small glass of coconut water containing 5 - 6 grams of carbs gave me a pretty significant glucose spike and then dumped me lower than I started. So I know I need to avoid that!
What type of sensor are you using?
 
It isn't possible to draw any credible conclusion from your single result - especially one that is unexpected.

In my experience, eating fat with carb slows down any rise in blood sugar. For some, it results in a modest rise, but the ride lasts longer. For some it just means there is a delay before a rise. There are of course other factors that could be in play - like your activity levels after your buttery toast, whether your blood sugars were rising or falling before eating your toast and a few others. Some also would find their blood glucose might rise again in the period after your graph.

All of that is very simplified.

To be honest, if you want more of an insight, you would have to repeat the exercise a few times to see more credible trends.

In any case, your meandering from 5-andabit to what looks like 7-andabit wouldn't be medically alarming.

I had purchased 2 sensors 12 months ago and both fell of after a few days I reported the problem to Customer Service and they posted a new unit but I have not used it until now so it’s an old generation device hope it still in date…. I have a new libre 2 unit when this one runs out so I suppose I’ll find out then. I had previously used a sensor from super sapiens which I think is an abbot unit….

OK. I'm using Freestyle Libre 2, but looking for alternatives after terrible customer service.
I can get Dexacom sensors for around the same price so will switch to those.
My first Freestyle sensor failed after a few hours and they insist will not replace it because I'm not a type 2 diabetic on insulin and their sensors are "only" intended for those people. You're probably covered there so they will be a good option for you.
My second FL2 seems to be working as it should at least, so I'll see this one out anyway.
