Help me understand? After a BG spike...

I've noticed if I get a bit of a BG spike, I'll sometimes drop lower than my typical fasting BG level before stabilising. Is this the result of Insulin 'over' correcting?
I've seen a couple of internet MDs suggest it reflects insulin resistance, but I'm keen to know what others have been told or have learned.

I think you can see exactly what you described in this thread by @Rachox , who eats very low carb but accidentally had a real coke today: https://www.diabetes.co.uk/forum/threads/a-salutary-lesson-this-festive-season.201357/

I think it's the result of initially going high, which shocks the pancreas into producing insulin in a somewhat panicky way, causing it to overdo its thing.

Haha yes I saw that and realised I've noticed it with myself, particularly with 'quick' carbs.....in my case a glass of coconut water.
I had seen it mentioned as something to be watched out for as a sign of insulin resistance, however in the context of low carb I think things can be interpreted differently. It makes sense the pancreas would get excited, because they get less opportunity to with low carbers in general?
PS I fermented the coconut water using a kefir starter...and now - magic - no spike or even a bump really.
