Low Carb Mint Ice-cream

In this (glorious?) hot weather I thought I'd share my low carb Mint Ice-cream receipe. I use my Ninja creamy, but it can also be done in an Ice cream machine or even no churn.

2 Avacodos
250mls Double Cream
250mls Milk of your choice
100g Powdered sweetener (I use Erythritol)
1 tspn peppermint extract
1/2 tspn salt
optional Dark Chocolate chips

blend all the ingredients together

If using a Ninja freeze for approx 8hrs then use the Ice Cream setting
In an Ice cream machine churn for about 20 minutes
straight into the freezer - try and fork it about twice during the freezing process

enjoy the minty coldness (you could use different flavours if the cognitive dissonance of green ice cream not being mint flavoured doesn't bother you)

It sounds delicious.
I have been experimenting with low carb, high protein ice desserts, using cottage cheese, and cocoa powder, with erythritol and vanilla.

I'm afraid I don't, but it would vary on the type of cream and milk that you use (in theory you could use all cream which would reduce the carbs even further, but increase the fat) my other new favourite is Frozen Quark with a splash of vanilla and frozen berries, no sweetner needed
 
I tried using just these ingredients to keep low carb, and moderate fat.
300g cottage cheese whipped up with blender to get rid of lumps
Erythritiol just a small teaspoon. I don’t like too much sweetness
Pinch of salt
Heaped teaspoon of cocoa powder.

Get cottage cheese smooth, first, then add and blend everything else.

A 100g portion I calculated at 4 g carb, as long as the erythritol polyols are discounted.

I just stuck it in freezer for an hour and a half, then gave it a stir, it was soft scoop. I am not sure how it would be if left in freezer for longer.
I need to experiment more, but maybe will try your recipe @lessci . Only trouble is I would need to be wary that I am the only person in this house that would eat it, and if delicious, well….:bag:;)

Maybe I will make it creamier by adding avocado.

I have a freezing plate for making ice cream, had it years, mine is round but they all seem to be rectangle these days. Makes soft scoop portion that you have to eat right away. Just keep it in the freezer and similar recipe of cream & milk, I just use cream but it does make it softer than if you add milk, any flavour you want, just pour it on & bash away. Makes slushies & frozen cocktails too ;)

Never thought of using cottage cheese @Pipp going to give it a try now I’ve had to cut down a lot on fat, great tip :)

Thank you. I did add salt.

My aim is to get cottage cheese to be more palatable, because, I need to consume more calcium, but reduce amount of fat I eat. Mainly because, unfortunately, fat does cause me weight gain, too.

I don’t really much like sweet foods and those that have a lot of artificial sweeteners tend to leave an unpleasant aftertaste. I am wondering about sugar free flavoured syrups instead of erythritol.
Maybe I just need to make savoury ice cream. :hilarious:

I'd LOVE to eat avocados but in this heat they just don't last.
I used to eat them every day but they only lasted one day and they were bad the next day.
