Rice!

Right, this may sound stupid but I am only 19 aha! But erm if I was to make rice the night before for work would it still be okay to eat it for lunch the following day?!
 
Do you reheat it? Or can I cook it put it straight in the fridge and then eat it at lunch the next day without reheating!?
 
Oh okay! I just want something easy and kinda healthy to eat as I dont really like salads etc :(

That's the best way Nicola. Before I switched to low carb I used to cook and store overnight in the fridge, no probs. If you have some protein with it it might slow down the carb absorption and reduce BG spike. I haven't tried it because I'm happy with my diet as it is. Good luck and enjoy ;)

Do you have any idea's of protein that would go well with it? :) and thank you And also what is your diet? :)
 
Chicken is good as is any cooked meat ,cheese .fish such as smoked mackerel some supermarkets sell it with pepper which is very tasty Thats just a starter I am sure ther will be more ideas along soon

Hi Nicola :). Any protein really, meat, fish , hard boiled eggs, a few nuts. I particularly used to enjoy flaked smoked mackerel or hot smoked salmon flakes mixed with Mayo and some herbs, the extra flavours goes well with rice. I'm T2 insulin dependent on an insulin mix twice daily. I low carb... up to 30g per day but more often less than 25g. I wouldn't say I'm particularly high fat but i fry food, usually in coconut oil, eat cream, proper butter, full fat mayo and yogurt, some cheese and certain nuts and loads of green veg, except peas. I'm managing to keep my BGs in the 4s and 5s quite easily, (want to try reducing insulin now). Low Carb suits my body and my life style very well. Good luck with your lunches :)

Hi Nicola, I make rice with vegetables and tofu, often with spices, many recepies to google, if I want to eat it hot I use the mic tor eat it cold from the fridge like a salad rice,

I eat Basmati rice once/twice a week for lunch and throw some frozen peas in whilst it's cooking, for protein and fat I like tuna and mayo to go alongside it.
