This might be silly question!! But can we eat pumpkin???

I can eat it in small amounts without spiking my blood glucose - but the only way to find out if it suits you is to test.
 
I count a plate of veg as 20g which includes everything except potato
But you can carb count each veg if you want to. 6g per 100g for pumpkin

Yes.

To expand a bit. There's 6grammes of carbohydrate per 100grammes of pumpkin (USDA) so it's relatively low carb. The word there is relatively you'd be advised to test your blood sugar before and after eating it to check the effect.
