As the clocks have gone back and longer dark evenings are here .
What night time 'nibbles' do you have and safely enjoy ?

This can help us all to enjoy a nibble without doing too much damage
with our blood sugar ranges .
 
Slice of cheese plus a chopped up apple for me tonight :)

1 heaped tsp cocoa (NOT drinking chocolate)
1 heaped ish tsp sugar substitute (I've been using xylitol, and just switched to erythritol)
Boiled water
Cream, pref double, to taste (or powdered coconut cream)

While kettle boils, mix cocoa and sugar sub together with a little water to form a smooth paste.
Add hot water, then a dash of cream.

All quantities variable, to taste.
You may be surprised how much sweetening you need. Makes me realise how much sugar there must be in Dairy Milk!

If I need a little nibble I go for a handful of nuts... but with Christmas coming I might start cracking the real thing. :)
 
Don't generally snack on an evening, but if my bg is low before bed (by low I mean in the 4's) I'll have a couple of Nairn's Cheese Oatcakes with some soft cheese.:)
 
Nothing but water. I never eat after tea or between meals.
When I was a child, however, I loved supper time with my dad. Golden Syrup sandwiches. Lol.

As a special treat my grandparents (Cornish) used to make us 'thunder and lightening'.
It was brown bread, spread with clotted cream, drizzled with artistic zigzags of golden syrup.
Divine.

Never heard of it since.

Anyone know if it is a Cornish thing?

I love a little night time snack ...
I have been known to make popcorn ...only twice in the last two years ...
It is apple and cheese for me ..sometimes a cheese biscuit
Sometimes a no added sugar ginger beer with a few almond nuts and lite or low fat crisps ...just a few at a time ....
And a bit of chocolate 70 % have found mint one in marks ... Very nice ...
They are all sometimes snacks ....not every night ....but all nice ....:)

Zigzags might be a creative @Brunneria bit of lovely lightening .... ;) Golden syrup ....brings back memories ....how interesting what we used to eat ...or what our grandparents gave us to eat ....
My dear nan used to make us special sweets ...they were rolled up ...butter and sugar balls ....:wideyed: That was in the early sixties all the grandchildren really thought they were sweets ...dear nan used to have her bread and dripping ...:eek:
 
Home made popcorn made with coconut oil then just salt on or some melted butter makes a nice nibbly snack. I can eat half a cereal bowl of made popcorn and it doesn't spike me. Guess its trial and error for everyone
 
I like the sound of the popcorn. I just put it into my fitness pal to see how high in calories and carbs it was. It came out as 55 calories for 1 cup when cooked in oil but I then couldn't decide if the 1 cup was before or after cooking. :joyful:
 
Try coconut,cheese anf egg biscuits cook up a batch of ten use 4 egg , 4 ozs of coconut four , 4ozs of grated cheese, and half a teaspoon of baking powder, if you like cayenne pepper add a teaspoon mix all together and allow to stand for a minute divide into 10 pieces grease a baking tray flatten pieces onto baking tray so they are about quarter inch thick then bake at 200 c for fifteen minutes ...enjoy. Coconut flour is very filling and carb free!ps forgot to add 4ozs of butter or coconut oil
