Which veggies are best to maintain lower BG?

Can anyone throw any light on which veggies are best (excluding potatoes) for maintaining a lower BG level. Is there a quick list which might save trawling through loads of recipes?
Has anyone out there found the perfect formula?
 
I'm a newby T1, but what I've learned from this forum is that underground veggies should be avoided - carrots, potatoes, parsnips etc. Above ground veg is much better, but then they are all different, so perhaps Moonchip's post might be helpful to you.

Thanks @June_C -- you're quite correct about 'below ground' and they're specifically banned for me whilst I'm doing my Newcastle Diet. Part of the stipulation daily is "200 gr of above ground green veg"

I've posted elsewhere about my low carb chips made with Swede and they really are lovely with a hint of parsnip to them - I love parsnips but they're respectively high in carb sugars

If you like carrots, then you can use the 'above ground' green bits which actually taste more like carrots than the orange bit - maybe thats why rabbits like them so much :)

Ok, 1. How do you make Swede chips and 2. How do I buy the green bits of carrots without buying the whole carrot, which I would finish up throwing away as I don't have carrot loving animals? :rolleyes:
