How times change...

Seven months ago I'd have looked at my tea of tofu burgers, sweet potato and broccoli, and felt guilty about putting butter on the veg. Six months of LCHF later, and two and a half stone lighter, I looked, thought hmm, not enough fat and added not only butter but some grated cheese for good measure!
 
I never even thought of eating fat....it was forbidden....and now it's butter with everything :D...cheese was a rare treat and bacon?....maybe once a year .....thank goodness for LCHF :D
 
Just this evening I was clearing out some old supermarket invoices dating from just before I was diagnosed prediabetic ... they included ...
strawberry, pineapple & apricot jam; golden granulated ("healthier") sugar; cherry bakewells; apple & blackcurrant squash; lemonade; figs, dates & prunes; jelly babies; Branston pickle; light salad cream; cereal bars; After 8s; fish fingers; meal deal – potato & onion bhaji & 2 meat dishes with rice; poppadoms; strawberry yoghurt; breaded fish; redcurrant jelly; malt loaf; 2 lots of new potatoes; ketchup; 2 lots of noodles & 3 of supernoodles; mint sauce; pineapple in juice; fruit juice including mango, peach & papaya; reduced sugar & salt baked beans; skimmed milk; wholewheat pasta; cheese biscuits; sundry fruits (but no berries!); muesli with fruit ....
Those were the days, my friends!
 
I used to have to force myself to eat fruit! I still eat berries but I'll take butter & cheese over a banana any day :D

Great post DeejayR! Jam (made with lots of fruit and real sugar) on buttered, gluten-free toast with an egg and a small potato was a typical breakfast for me. Today, it's an omelet made with a butter, mushrooms, spinach, an egg, and crumpled feta cheese. Yum! Every bit as good. Just different. :)
 
It is amazing to see how far one comes, isn't it? Looking back, I think "Goodness, I was eating pure sugar & carbs and thought I was eating somewhat healthy".
 
I'm kinda gleeful I'm eating all the butter, mayo, eggs and bacon I want. Hehehe
 
@Jajabing Love your avatar. I had a hamster as a child. He sometimes would break out of his cage and wake me up. :)

I'm allowing myself a couple of tablespoons of mayonnaise a week due to it's oil content - (typically soybean or canola oil which contain omega 6 fatty acids; nuts, which I eat daily, also contain omega 6's). I was able to find a Best Foods Mayonnaise with Olive Oil. Soybean oil is the first listed ingredient, olive oil second, eggs third, which makes me feel a little bit better. Ideally, I'd like to find a recipe for making a longer lasting mayonnaise, but haven't searched long enough yet in my online wanderings. And I'm still looking for a local source of macadamia nut oil. I hear such good things about it here and elsewhere.

Butter, eggs, and bacon continue to be a favorite of mine too. :)

@Indy51 Have you tried it? Right now, I am using a mayo with nonGMO expeller pressed canola and eggs, lemon juice, etc., but I know that canola is not a great choice.

I am curious to know if it tastes like real mayo or faux mayo.

Haven't tasted it myself, but the ingredient list certainly couldn't be any "cleaner". Would probably cost an arm and a leg to import to Australia - probably a lot cheaper for @Winnie53 being in the same country.
 
@Indy51, thanks for posting the link! I was just coming back onto the forum to post it. Wellness Mama refers to it in the comment section of her mayonnaise recipe. She "loves it".

I just ordered three 12 ounce jars. Shipping was free (for three jars), but only for those of us in the US. All that said, it's made with avocado oil which, according to their website, has a 13.1:1 ratio of omega-6 to omega-3 fatty acids, which I assume is significantly better than soybean or canola oil. After opening, it keeps in the refrigerator for 60 days, unopened 9 months.

Do you have a hand blender?

Home made mayo is astonishingly easy. Plus you can add any oil, herbs, garlic, spices...
Although, of course it would be very difficult to stick to just 2 tablespoons a week.

 
Thanks! They are so cute but don't hang around long enough. Always crying buckets when they die.

I'm getting mayo from Heinz. Which is not ideal. There's some sugar in them. Maybe I can make some. I'm decided to think about diabetes as a second chance in life, so every little success is a reason to celebrate. Wine next!

I don't have table sauces, piccalilli, Branston, etc but I'm struggling to give up mayo completely. The lowest carb organic option available in my local supermarkets is the Simply Delicious organic mayo (2.3g carbs per 100ml) which uses sunflower oil. I don't like that, so I'm trialling using organic Extra Virgin olive oil instead.
