Sugar substitute confusion

I have never been a big sugar user but on this LCHF thought waffles might be a good idea.
Went looking for sugar substitutes.
Now I am so confused.
Why is the carb figure so high? How does it work? Will it spike me?
What sugar substitutes do people use?
Learning curve or what!
 
Most sugar substitutes are carbs called polyols which our bodies can't digest, they can have unfortunate digestive effects in large amounts. My substitute of choice is xyilatol (sic) sold as Total sweet in granulated form, others like Stevia products. As to spikes the only way to find out is to try it and test. But for my the waffles would cause a bigger splike than the sweetner!

What, even using almond or coconut flour? Looked ok to me. Sigh!
