There's no reason why you can't have a cooked breakfast sometimes :) Count the carbs and bolus if needed.
The honeymoon period is hard because your own pancreas can still produce some of its own insulin, so that could be contributing.

It is possible to feel excessively thirsty during pregnancy. I remember standing by the sink drinking one glass of water after another and my BS was fine.
How much water are you drinking in a day?
Don't panic @Jc3131 What you need to do is keep testing regularly to make sure you don't go too low.
Although it is ok to take a correction dose, I'd normally do that at 2 hours not so soon after eating.
Test frequently and be ready to top up with carbs if needed.
@MarkUniqueUserName The thing that stands out to me there is that he's not testing his blood sugar. If he doesn't test his blood sugar, then that makes things harder.
Yes, he might think he knows when he's high, but confirmation on a meter allows much better control.

Google also provides lots of personal examples where people have an haven't taken time off. Personally, I'd limit time off in the early stages but consider a sick note in the latter stages.
@MarkUniqueUserName I agree with the post above. Although most people with Type 1 tend to keep carbs below 200g a day, many eat more carbs than that. Carbs aren't forbidden. The important thing is to control blood sugar. Carbs aren't forbidden - that bears repeating.

The DAFNE course will also give her a chance to meet other Type 1s. That might be good. It can be very lonely feeling alone with diabetes.
Another thought - could a sibling or good friend carefully chat to her? Sometimes it takes someone of a similar age to say something that will be listened to.
